Notes | Derived from a selected strain of the bacteria Bacillus subtilis, this enzyme is used to catalyze the hydrolysis of proteins into peptides and amino acids. Mainly an endo-protease, this enzyme tends to cleave peptide bonds at random within the protein structure. Neutral Protease is used for animal feed conversion, dietary supplements, baking (as a gluten relaxer), flavors, and any other application to break down protein at a neutral pH.
