Notes | Fungal Protease (HU) exhibits both endo- and exo-peptidase activities, giving it a variety of functions and applicaitons. It is used widely in the food industry for baking, brewing, dairy processing, fermentation, protein modification, and soya modification. It is also used in animal feed, pharmaceutical applicaitons (digestive aid), and waste & processing equipment treatment. Performance is excellent on both animal and vegetable proteins in the pH range of 3.0 - 6.0, with optimum at pH = 3.0
